off the top of my head, one of my very favorite Shal episodes is "Understudy". I just really liked her in that episode. And I totally love that moment when Shal sees Nikki with Bren and flips out (hello, SUBTEXT)!
She's all "YOU'RE IN MY ROOM, WEARING MY CLOTHES, TRYING TO TAKE OVER MY LIFE!!! GET OUT!" and the way Vicky played it was so awesome! I love it.
Yeah..'understudy' was really good!! So was 'whose woods..' and from season one.."Fool for love"...I really liked 'under the cloak of war' too.. I loved that last scene with bren/shal..they are too cute ;D

"Once Around" (I think that was the ep that followed "Cloak") was a good episode too, another one where I really liked the way that Shalimar was written, even though the focus was not on her. And that scene with her and Bren at the end was sooo sweet. Wait...forget that scene...what about the part where Bren is working out with his shirt off? *drool*
As a Bren/Shal shipper, you definately have to include "One Step Closer". The payoff is all in that moment where Shal says to Brennan "What I do care about is you." That was more than friendship. It was written all over her face at that moment.
*dancing* Shal loves Brennan... ;D
But seriously, that moment I mentioned with Shal and Brennan... isn't that what Shalimar is all about? That depth of emotion? Its one of my favorite Shalimar episodes for that reason. Her real nature is revealed in that scene. When Shal loves, she loves with all of her heart, and protects what she loves, too.

Its funny cause Shal's love for Brennan is like blindingly obvious, to everyone except HER! But I think that changed with "Hand of God".
Speaking of that episode, I think it really said a lot about Shal's true nature, her sense of honor. I loved everything about her in that ep. It would have been so easy to foist Brennan's injuries off on Kristoff and then just walk away, but she couldn't be that selfish. She wouldn't ask that of anyone but herself, even though she could have. That was really awesome.

The loudest that I ever screamed at the tv though, was at the end of "The Breed" when they were SO CLOSE...I like litterally jumped up and screamed!!! It was more like a roar, actually ;D I think I threw the TV guide at the tv too. ;D
